Chef Raymond is a master of Macanese cuisine for over 30 years of training, his culinary training was handed down from his father, Henri Vong, the founder and founding chef of Maxim's Henri's Galley. For over 40 years, Maxim's Henri's Galley has served up the delicious classic flavors of Macau. Now, as General Manager of the restaurant, Chef Raymond continues his father's legacy.
