His cuisine focuses on molecular gastronomy, balancing creativity, tradition and the utmost respect for his environment upon a foundation of Japanese terroir and European techniques. His restaurant L'Effervescence in Tokyo has received two Michelin stars every year since 2015. In 2018, Asia's 50 Best Restaurants not only ranked L'Effervescence No. 20 on its list, but also awarded the restaurant the first-ever Sustainable Restaurant Award.
