Chef Valeria is not only the founder of Wooding Bar, but also its chef, forager, and lab director. She believes that foraging is important because it puts us back in touch with our local environment, and forces us to learn about and respect our ecosystems and habitats. Working with Wooding Bar allows her to put her beliefs into action and promote all-natural food and drinks. She has contributed to numerous international congresses of gastronomy, and works closely with several national and international organizations and universities involved in food and environmental research.
